So what would be my options if I wanted to convert a video that’s on an 8mm tape to a digital format?

You have two main choices, you can find someone that owns a Digital 8 camera and borrow it. This camera has a firewire port on it and often times will be able to play a regular Hi8 or 8mm tape and make the conversion to digital for you. The other choice is to get something like the Pinnacle Dazzle, which will make the conversion for you.
